- Combine olive oil, vinegar, and garlic in a saucepan and heat until warm over low heat
- Remove from heat and stir in lemon rind, thyme, rosemary, and fennel seeds
- Place olives in a heat proof container and pour in the olive oil mixture
- Let marinate overnight
- To serve, drain olives and place in a bowl and garnish with sprigs of thyme and rosemary, plus lemon peels

ANNIE'S OLIVE OIL WASHED NEGRONI

- Combine olive oil washed gin (recipe below), Campari, and sweet vermouth in a pitcher filled with ice and stir together
- Fill 4 glasses with ice
- Divide the Negroni between the 4 glasses and garnish with orange peels
Olive oil washed gin:
750 mL bottle gin
¼ cup olive oil
Combine olive oil and gin and shake well. Transfer mixture to freezer and store overnight.
