BRANDY'S CAVIAR WAFFLES

Waffles

  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¾ cup shaken buttermilk
  • ¼ cup water
  • 1 large egg, separated
  • 6 tbsp unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 3 tbsp granulated sugar

  • Whipped Eggnog Butter

  • ½ cup unsalted butter, softened to room temperature
  • 2 tbsp maple syrup
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of ground cloves (optional, as cloves can be strong)

  • For Serving

  • Whipped eggnog butter
  • Crème fraîche
  • ROE Caviar
  • Maple syrup
  • Chives

    INSTRUCTIONS

    1. In a large mixing bowl, whisk together the flour, cornstarch, salt, baking powder, and baking soda
    2. In a large measuring cup, whisk together the buttermilk, water, egg yolk, butter, and vanilla. Pour into the flour mixture and stir until just combined. Set aside
    3. In another mixing bowl, beat the egg white on high speed with an electric mixer until foamy
    4. Add in the sugar and beat until stiff, glossy peaks form. Fold into the reserved batter until just combined
    5. Cook the batter according to your waffle iron's instructions. Top your waffles with the whipped eggnog butter and ROE Caviar. To make them extra decadent you can also add maple syrup, crème fraîche, and chives
